Cherry-Lime Smoothie

The lime and vanilla in this smoothie will make you glad you looked past the color.

I don’t dare call this one a green smoothie, but it contains just as much green stuff as the “Running Late” smoothie I posted earlier. I know some folks have a hard time with bright green food. If you’re one of these, well, you might find a brown smoothie even hard to look forward to, especially if I tell you it doesn’t taste like chocolate.

The bad news ends there—I promise. This Cherry-Lime smoothie tastes amazing. So, don’t judge a smoothie by its color? Is that a thing? Ha, it should be.

I love the zing that lime gives a smoothie and the flavor of cherries and lime go so well together.

This smoothie is also easy and fast to make if you’re in a rush. Here’s how to put it together. Take about two packed cups of spinach and two cups of water and blend them together until smooth. Then add two cups or so of dark, sweet (pitted) frozen cherries. Blend these until the mixture is smooth. Finally add a teaspoon of vanilla and two tablespoons of lime juice, either fresh squeezed or from a bottle.

This morning I also added a tablespoon of protein breakfast boost powder and a tablespoon of ácai berry powder. These and other such add-ins are optional. Some can affect the taste. You can adjust amounts as needed. I also added a 1/4 teaspoon of liquid stevia for a sweetness boost. You can leave this out or swap it of another sweeter of your choice. If you’d rather go without sweeter, add an extra 1/2 cup of cherries or maybe a full cup if you are feeling indulgent.

If you use fresh cherries, swap one cup of water for a cup or a little more of ice. I find smoothies to be more enjoyable cool and the ice will thicken and cool the smoothie in the absence of frozen fruit. If you like a thinker smoothie, just back off a bit more on the water or add more frozen fruit or ice.

I love the zing that lime gives a smoothie and the flavor of cherries and lime go so well together. The vanilla smoothes out the taste and makes me want to drink this one slower to really enjoy it. But, frankly, it’s too good to drink slow.

Here’s the recipe in an easier-to-follow format:

Ingredients:

  • 2 Cups Firmly packed spinach
  • 2 Cups Water
  • 2 Cups Frozen Dark Sweet Cherries
  • 2 Tbsp Lime Juice
  • 1 tsp Vanilla
  • 1/4 tsp Liquid Stevia

Directions:

  1. Blend spinach and water, first on low and then medium high for 90 seconds.
  2. Add frozen cherries and blend on high for 60 seconds
  3. Add the lime juice, vanilla, and liquid stevia and blend for another 30 seconds
  4. Pour into glass and serve.
  5. Enjoy and share with a doubtful friend :)
